Harvest-Inspired Approach
This time of year, fall activities are on everyone’s minds, and the culinary team is no different. As he maps out his menu for the season, Chef Cory draws on memories of harvest time as a child. From fall markets to canning and preservations to prepare for winter, autumn marks the gathering of families returning indoors to warm their bodies – and hearts. Cory’s menu is equally heart-warming (and filling)! In addition to featuring seasonal favorites, the team will also be welcoming back slow-cooked food. Not only does this method of cooking enhance each ingredient’s unique flavors, but it creates fall-off-the-bone tenderness.

Prepare For Fall Flavors
In the fall, guests can enjoy horseback riding to see postcard-worthy views of Colorado’s famous golden aspens, hike through miles of crunchy leaves, or snuggle up around the fire to reminisce about the day’s activities. And at C Lazy U, the magic doesn’t stop at mealtime. Chef Cory and his team are building fall’s menu based on the starlets of the season – including apples, winter squash, venison, duck, and elk. Chef Cory has revealed that fall’s menu will include homemade pasta, stews, and comfort foods like chicken-fried steak. While we can’t showcase the full fall menu just yet, we did ask Chef Cory to share his favorite autumn dishes – and there’s a good chance his personal favorites may influence autumn’s upcoming meals.
