With extensive experience in the food service industry, Mr. Kaniger was most recently a seasonal chef supporting the popular summer season at C Lazy U.

“We are thrilled to promote Mr. Kaniger to executive chef at the ranch,” said Connie Dorsey, general manager. “We pride ourselves for providing our guests with a top-notch experience in every aspect of their stay, and dining is a very important touch point. I have no doubt that Dennis will not only maintain this standard in the kitchen, but exceed it.”

As executive chef at C Lazy U, Kaniger will lead the kitchen team in developing the Ranch’s continuously evolving fine dining menu concept, as well as overseeing the execution of dishes for the guests. Meals at C Lazy U are served family-style in the rustically elegant dining room. The daily changing menus highlight regional specialties, including aged western beef and Rocky Mountain trout, complimented by mouthwatering desserts and an extensive wine list, as well as after-dinner drinks and fireside entertainment.

With a degree in food service management from The University of California at Los Angeles, Kaniger worked at various well-known restaurants in southern California such as Ma Maison, Spago, Trumps, Max au Triangle and Citrus before becoming executive chef at the very popular CITY Restaurant. Thereafter, Kaniger’s passion for food and cooking lead him to open his own restaurant, Venue, in Kansas City. Venue quickly received acclaim, and consequently Kaniger renovated Venue four years later, creating a larger restaurant that seated more than four times the number of people the initial restaurant accommodated. A four-star restaurant, Venue was also the exclusive caterer for the renowned Kemper Museum of Contemporary Art and Design.

I can't say enough about your staff. Jackson greeted us as soon as we pulled in. All of the servers were helpful, engaging, and they had an uncanny way of anticipating our every need. Trent must have a superpower because he never seemed to tire of us and our endless requests. He has a terrific sense of humor, and his name recall was outstanding. Peyton killed it with the karaoke (and he probably never wants to hear “Sweet Caroline” for the rest of his life.) He fit right in and had only been on the ranch for 3 days. I enjoyed the shooting time with him and Jackson. And the biggest shoutout to Trevor – hiker extraordinaire. If we'd asked him to take us 15 more miles, he would have done it with a smile. He appeared like magic the morning we left and was able to charge our completely dead car battery so that we could still make our flight. We would not have made it without him. The property is gorgeous, and the staff is over the top. The food, wine and drinks were outstanding. I hope to return next time with my family, though I'd repeat my girls' weekend in a minute.
